We delve into the world of Burrow Patisserie, redefining pastry one artistic influence at a time

Baking, when done properly, is truly an art form – and if you don't believe us, just take a look at the breathtaking creations of Burrow Patisserie. The brainchild of Ayako Kurokawa, a New York-based pâtissier, pastry sculptor and food stylist, the bakery is based in a tiny space in Brooklyn (a lobby to be precise) but opens its doors to the wider world via its Instagram account. From swirling, sculptural cakes to delicately hand-painted biscuits and animal-shaped delights, as well as more traditional but no less delicious looking patisserie treats, there's little that the talented chef can't tackle. All of Kurokawa's pastry recipes derive from classic French cookery, but are developed with the Japanese and American influences she had growing up; while the portrait and sculpture cakes are inspired by her love of stone carving and clay sculpture.
